  • 1/2 cup unsweetened applesauce Opt for unsweetened varieties to control sugar content.
  • 1/2 cup granulated sugar or coconut sugar Use coconut sugar for a lower glycemic index.
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour (or whole wheat flour for a healthier option)
  • 1/2 cup unsweetened cocoa powder Using high-quality dark cocoa powder enhances flavor.
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional for extra richness)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease or line an 8x8-inch baking pan with parchment paper.
  3. In a medium-sized bowl, whisk together the Greek yogurt, applesauce, sugar, eggs, and vanilla extract until smooth and well combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients into the wet ingredients, stirring until just combined.
  6. Fold in the chocolate chips if using.
  7. Pour the batter into the prepared baking pan, spreading it evenly.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean.
  2. Allow the brownies to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
Serving
  1. Once cool, cut into squares and enjoy.

Notes

Customize with nuts or chocolate chips. Store in an airtight container for 2 days at room temperature or up to a week in the fridge.
