Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine cauliflower rice, shredded chicken, broccoli, carrots, shredded cheese, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Mix thoroughly.
- Lightly grease a casserole dish (9x13) with olive oil.
- Transfer the mixture into the greased dish and smooth the top.
Baking
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until bubbly and golden on top.
- Remove from the oven and let it cool slightly before serving.
- Garnish with fresh parsley before serving.
Notes
Drain excess moisture from cauliflower rice for a fluffy texture. For extra crunch, consider adding crushed crackers on top before baking. Don't skip the cooling step to facilitate serving.
