  • 2 cups cauliflower rice Fresh or frozen; ensure it's thawed and drained well if using frozen.
  • 1 pound chicken breast, cooked and shredded For convenience, use rotisserie chicken.
  • 1 cup broccoli florets Fresh or steamed; frozen broccoli works too.
  • 1 cup shredded carrots Fresh is best for crunch, but pre-packaged works well.
  • 1 cup low-fat shredded cheese Cheddar or a cheese blend is recommended.
  • 1 can cream of chicken soup Look for low-sodium options or make your own.
Seasonings
  • 1/2 teaspoon garlic powder Adds depth of flavor; fresh garlic can be used as well.
  • 1/2 teaspoon onion powder Enhances the flavor of the casserole.
  • to taste Salt and pepper Adjust according to preference.
Other
  • 1 tablespoon olive oil For greasing the dish; cooking spray can also be used.
  • to taste Fresh parsley for garnish Adds freshness and color.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cauliflower rice, shredded chicken, broccoli, carrots, shredded cheese, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Mix thoroughly.
  3. Lightly grease a casserole dish (9x13) with olive oil.
  4. Transfer the mixture into the greased dish and smooth the top.
Baking
  1. Cover the dish with aluminum foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden on top.
  3. Remove from the oven and let it cool slightly before serving.
  4. Garnish with fresh parsley before serving.

Notes

Drain excess moisture from cauliflower rice for a fluffy texture. For extra crunch, consider adding crushed crackers on top before baking. Don't skip the cooling step to facilitate serving.
