  • 1/4 cup fresh lemon juice Nothing beats the vibrant flavor of fresh lemons; it’s worth squeezing them yourself!
  • 2 tablespoons honey or maple syrup Adjust sweetness according to your taste preference.
  • Zest of 1 lemon Adds an aromatic punch.
  • Pinch N/A salt Elevates the flavors.

Preparation
  1. In a mixing bowl, combine the chia seeds, almond milk, lemon juice, honey (or maple syrup), lemon zest, and a pinch of salt. Use a whisk or a fork to combine everything thoroughly.
  2. Ensure there are no clumps of chia seeds for a smooth pudding texture.
  3. Let the mixture sit for about 5 minutes, allowing the chia seeds to absorb the liquid.
  4. Give the pudding another stir to prevent the seeds from settling at the bottom.
  5. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight, until the pudding thickens.
  6. Once thickened, serve the pudding chilled, topped with fresh fruit or extra lemon zest if desired.

Notes

Store the pudding in airtight containers in the fridge for up to 5 days. This recipe can also be prepared ahead of time for convenient meal prep. If your pudding is too thick, add a splash more milk; if too runny, let it sit longer in the fridge.
