- In a mixing bowl, combine the chia seeds, almond milk, lemon juice, honey (or maple syrup), lemon zest, and a pinch of salt. Use a whisk or a fork to combine everything thoroughly.
- Ensure there are no clumps of chia seeds for a smooth pudding texture.
- Let the mixture sit for about 5 minutes, allowing the chia seeds to absorb the liquid.
- Give the pudding another stir to prevent the seeds from settling at the bottom.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight, until the pudding thickens.
- Once thickened, serve the pudding chilled, topped with fresh fruit or extra lemon zest if desired.
Notes
Store the pudding in airtight containers in the fridge for up to 5 days. This recipe can also be prepared ahead of time for convenient meal prep. If your pudding is too thick, add a splash more milk; if too runny, let it sit longer in the fridge.
