  • 4 medium potatoes, diced (Russet works best)
  • 1 pound ground beef or turkey feel free to swap for a plant-based alternative if desired
  • 1 tablespoon taco seasoning store-bought or homemade—just make sure it’s full of flavor!
  • 1 cup corn frozen or fresh—both are delicious
  • 1 cup black beans, rinsed and drained canned is fine for convenience
  • 1 cup diced tomatoes fresh or canned…those summer garden tomatoes are simply divine!
  • 1 each avocado, sliced ripe and ready for buttery bites!
  • 1 cup shredded cheese Cheddar or a Mexican blend adds great flavor
  • to taste salt and pepper
  • to taste olive oil for roasting those potatoes
  • to garnish fresh cilantro don’t skip this—it’s like the cherry on top!

Preparation
  1. Preheat your oven to 400°F (200°C). A hot oven is essential for achieving that delicious crispy texture on the potatoes.
  2. Toss your diced potatoes in a large bowl with olive oil, a generous sprinkle of salt, and pepper until evenly coated. Spread them out on a baking sheet lined with parchment paper. Roast in the oven for about 25-30 minutes, or until they turn golden and crispy. Flip them halfway with a spatula for even cooking.
  3. In a skillet over medium heat, add a drizzle of olive oil and cook the ground meat until completely browned, about 5-7 minutes. Break it apart with your spatula to help it cook evenly. Once browned, stir in the taco seasoning and a splash of water to enhance the flavor. Let it simmer for 2-3 minutes.
  4. Once the potatoes are done, it’s time to assemble! Start with a generous base of crispy roasted potatoes, then top it with the seasoned meat, corn, black beans, diced tomatoes, shredded cheese, and sliced avocado.
  5. Finish with a sprinkle of fresh cilantro, and maybe even a squeeze of lime if you’re feeling zesty. Serve warm, and enjoy the cheers from your family!

Notes

Store any leftovers in an airtight container in the fridge for up to three days. Reheat in the oven for the best crispy results. Components can be prepared ahead of time for ease.
