  • 8 oz rotini or penne pasta

Method
 

Preparation
  1. Bring a pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside to cool.
  2. In a large mixing bowl, combine the corn, mayonnaise, lime juice, chili powder, and a pinch of salt and pepper. Mix until well blended.
Assembly
  1. Gently toss the cooked pasta into the corn mixture, ensuring every piece is coated in the dressing.
  2. Fold in the crumbled Cotija cheese and chopped cilantro.
Serving
  1. Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
  2. Serve in a vibrant bowl and top with additional Cotija cheese and a sprinkle of chili powder, if desired.

Notes

For a lighter version, swap mayonnaise with Greek yogurt. Add cooked black beans for extra protein or sprinkle seeds for crunch.
