Ingredients
  

Main Ingredients
  • 1 cup quinoa Look for organic quinoa if possible for richer flavor.
  • 2 cups water Fresh, filtered water helps bring out the best taste.
  • 2 large eggs Room temperature eggs bind everything together.
  • 1 cup mozzarella cheese, shredded Feel free to substitute with feta or cheddar.
  • 1 teaspoon garlic powder A pantry staple that enhances flavor.
  • 1 teaspoon onion powder Adds depth to the patties.
  • to taste salt and pepper Use coarse sea salt for extra crunch.
  • Oil for frying Olive oil is preferred for its health benefits.

Method
 

Preparation
  1. Rinse 1 cup of quinoa under cold water to remove its natural coating that can make it taste bitter. Drain well.
  2. In a pot, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the quinoa is fluffy.
  3. In a large mixing bowl, combine the cooked quinoa (let it cool for a few minutes), 2 eggs, shredded mozzarella cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. With damp hands, form the mixture into patties—about 2-3 inches in diameter.
Cooking
  1. Heat a generous splash of oil in a skillet over medium heat. Once hot, add the patties (cook in batches if needed) and fry for about 4-5 minutes on each side until golden brown and crispy.
  2. Serve warm, preferably with a side of hummus, yogurt sauce, or a fresh salad.

Notes

Store leftover patties in an airtight container in the fridge for up to 3 days. They can also be frozen for up to 2 months.
