Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a small baking dish.
- Thaw and squeeze the spinach until it is as dry as possible.
- Drain and chop the artichokes into bite-sized pieces.
- In a large bowl, mix together the softened cream cheese, sour cream, and mayonnaise until smooth.
- Stir in the minced garlic, salt, pepper, and optional crushed red pepper flakes.
- Fold in the spinach, artichokes, most of the mozzarella, and most of the Parmesan, saving some cheese for topping.
Cooking
- Spread the mixture into the prepared baking dish, top with the reserved cheese, and bake for 20 to 25 minutes until hot and bubbly.
- Let it rest for about 5 minutes before serving.
Notes
Serve with tortilla chips, sliced baguette, pita chips, crackers, or fresh veggies. Squeeze spinach thoroughly to avoid watery dip. Can be made ahead and refrigerated.
