- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or spray with cooking oil to prevent sticking.
- In a large mixing bowl, combine the cottage cheese and panko breadcrumbs thoroughly until well-blended. If it appears too wet, add more breadcrumbs until you achieve a firmer consistency.
- Scoop about a tablespoon of the mixture and mold it into a tot shape. Repeat until all the mixture is used, placing each tot on your prepared baking sheet.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through for even cooking. They are done when golden brown.
- Remove from the oven and let the tots cool for a few minutes before serving.

Quality ingredients matter. Uniform sizes ensure even cooking, so scoop the mixture into similar tablespoon-size portions. You can prep the mixture and shape the tots ahead of time and freeze them before baking; just add a few extra minutes to the cooking time if baking from frozen. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore crispiness.
